Makes 8 Burgers
Just a good burger, no need to smash it!
Directions
Patty 8 burgers of equal size. Be sure to match the size of the patty to the size of the burger bun. Season with salt and pepper.
Heat large pot on medium heat, add a glug of olive oil, then the sliced onions. As onions begin to turn golden, turn heat down and cook for an additional 20-30 minutes, consistently stirring. If pan dries, add a tablespoon of water. Onions should turn nut brown. Take care not to burn.
Prepare your Hanksville Grill, for cooking. Along wood to burn down to coals. Wipe grill grate with a rag and vegetable oil.
While grill is heating, mix mayonnaise, ketchup, spices, hot sauce & pickles.
Place burgers at the lowest grill setting, over hot coals. Cook 2-3 minutes, flip, top with American cheese and caramelized onion. Cook an additional 3 minutes or until desired doneness. Pull from fire and rest on a clean plate.
Cut buns (toast on your grill if desired). Add a spoonful of burger sauce to bottom bun, follow with the burger a generous amount of arugula, sauce the top bun and enjoy your burger.

Ground Beef, use the best beef you can find
3 large white onions, sliced thin
Olive Oil
1 ½ c. Mayonaisse
¼ c. Ketchup
½ c. Dill Pickles, finely chopped
Hot Sauce
1 t. Paprika, garlic powder, chili powder
8 slices, American Cheese
Handfuls Arugula
8 of the best burger buns you can find
Kosher Salt & Black Pepper
